Rob, check for broken or leaking vacuum lines, and then check the operation
of the idle stabilizer valve(s) (there are two if your car has factory AC).
You may also want to check the timing.
If all the vacuum lines are in good shape, the ISV's work at stabilizing the
idle if it drops below 750 rpm.  Your car should idle at 1,000 plus-or-minus
200 rpm.  If the ISV doesn't kick on, it stalls.  However, if the timing is
too far advanced, it'll idle erratically, possibly beyond the control of the
ISV.
These ISV's, by the way, are located near the passenger-side shock tower,
roughly between it and the intake plenum.  They are little chunky approx 1"
square gizmos, mounted on their own bracket.
