May be too late here, but word on VW Vortex is that TT valve springs 
are prone to fail.  That spells very bad things for your cylinder 
head... if it's not too late, get Schrick ones instead.  Odds are 
you'll be ok with the TT, but you never know...

As far as the valve guides go, your machinist is talking about 
cutting them down, or maybe even flush to the top of the ports. 
Usually there is 1/2 or 3/4" of exposed valve guide sticking down 
into the port.  Reducing it, or cutting it down flush, is one way to 
increase airflow into the combustion chamber.  The downside to doing 
this is accelerated wear to the guides themselves; that means you'll 
need to replace them more regularly.  Is it worth it?  Probably 
not... I left mine as-is.

Whatever you do, DON'T deck the head down to minimum height.  If for 
some reason your head needs to be resurfaced down the road, like if 
it warps or whatever, it'll already be down to minimum and they wont' 
be able to safely machine it.  Then your ported head is junk :P  Try 
a VW Motorsport head gasket instead - Owen Rabey has one and I know 
it's bumped his compression (you can tell just by listening to it 
idle) with no drawbacks.  I think he bailed off the list, so you'd 
have to email him direct to ask him about it...
