Having not been under the hood of that model/year since it came out I'm
going on the premise it has an overflow system like the A2 Golf/Jettas.
If so back filling the block via the upper rad hose is a god first step
as is leaving the cap loose and driving around under light duty w/ the
heater on to get the water pump to flow at nominal volume while the
thermo is open.

This should 'burp' the baby, cooling and later topping off of coolant
should do it.
