Why can't you get the headliner out without removing the seals?

You have to kind of fold the seal back and pull the headliner out. There's 
not much material that's under the seals. Replacement of the seals is far 
out of the question, except the windshield, as far as I know since those 
things aren't available anyone (otherwise enlighten me as to where to get 
those seals hehe).

I've been working on doing a black leather (rough side down instead of 
smooth for some nice texture) headliner - with the front and side pillar 
pieces attached in the same material, instead of the vinyl pieces that are 
there now.

You can pretty much buy a heavy duty sewing machine on Ebay for ~$100.
I've also looked at cost of leather - on Ebay again you can get large hides 
for around ~$60. Buying them from a retailer can run in the hundreds per 
skin, depending on the quality. Since the headliner is not a small piece the 
cost of leather would most likely have to encompass two good sized hides.

I'd spend at least $100-$150 bucks on a leather version - since I know the 
costs. Let me know if you're going through with this undertaking, it'd save 
me some work  :)
