If you life in a climate or place where they put salt on the roads they sometimes break easiler. Stainless comes in lots of qualitys and the lower qualitys do rust in salty enviroment.
But biggest problem is more often the stainless lines can't be bend as much as a rubber line when replacing pads etc. Some people don't watch up for that

I don't believ it would

Because they build cars that are sold for lots of money doesn't mean they don't try to eliminate unecessary costs. Instead of doing own button, heater controls etc on the Ferrari F40 they went in the warehouse of Fiat and took controls for everything. If cost wasn't an issue, wouldn't they done there own controls.

If you buy a Ferrari for 50 times what a Fiat cost, do you want the Fiat to look the same?
