Easier way? Hmm. Well, you could try and pry it off with a screwdriver.
You run the risk of damaging the dash or the mounting area of the switch.
(Depending on if you care about those things.) 
The other way is to go at it from under the dash and release it from the
back side. This is maybe a little more time consuming but its the right
way to do it.

You are wrong, it IS a common problem on our cars that came without the
transfer pump. (I don't recall which year they started to come on but I
suspect some time after 85ish.) 
I have the same problem and cant race with less than half a tank (also
depending on the track, fast long right handers suck for me!) and I
always take a couple extra gallons with me to the track just in case I do
"Chug" through the corners. You can upgrade to the later style fuel
system but I recall that if you have the full size spare tire wheel well
you can use it. (According to Mike.)
