Hmm... As I recall there is a kit to fit three in the console? I don't
remember my 85 that well, but there's always the radio spot for three, as
well. You could get a CD changer with a wired remote tuner/controler. The
good thing about that is a potential stereo thief won't see a radio unit if
you tossthe remote under the seat. I had a set-up  like that and it was
great. 
Guess my priority would be (in order) keep the factory water temp and add oil
temp, oil pressure, boost, exhaust temp (you can really tell if you're
leaning out with this). I had these four on my 79 turbo Scirocco and never
had a problem. If there's still room you could then add fuel pressure, cyl
head temp, voltage, but I don't think I'd waste the money. There's not much
those will tell you that the first four won't. I'd use the oil pressure
sender that also turns on the idiot light, too. It's always good to have that
warning in case you aren't looking at the guage and the pressure drops. 
I wouldn't add any hang-on guages, either. Your car's too clean to clutter up
like that. I'd stick with subtle and as original-looking as possible. It's
also less for the passengers to break off if they aren't paying attention. I
once heard it said that your best friend is your car's worst enemy. I've seen
it verified, too.
I'll have to pull out my old Scirocco brochures and old Road and Tracks and
refresh my memory on your console. Is there one factory guage there? Oil
temp, maybe?
