The Scirocco roof would be the first choice. Not sure if the GTI roof is
exactly the same curve, but you might be able to make it work.

I did this with a Bug years back. Just be sure to get the roof clip cut off
in the window posts, so the shop has lots of metal to work with. The only
problem I see would be if they forget to install the drain tubes. Of course,
you will need to get a sunroof headliner.
