1.8t... anyone try to fit a 16v head?

No.
The exhaust manifold bolt pattern is different (and I suspect the port
spacing is different too since the 16V outer cylinder ports are angled in
somewhat).
The intake manifold bolt pattern is different also and the port sizes and
shapes are quite different.
There are also other subtle differences like the coolant outlet on the head
and the location of various sensors that will complicate things.
And don't forget that the 16V head leans forward on the block while the 20V
head does not and that the angle of the manifold flanges on the two heads
are also quite different.
Valves for the 1.8T are not cheap at $22 for the intakes and $52 for the
exhaust (at Techtonics which is hardly the cheapest source out there) but
the cost of doing a conversion can rapidly escalate and make the cost of
valves seem pretty reasonable.

OK, second option. 9a block and head, stacked gaskets; can it be
swapped into that car using the 1.8t intake/exhaust/etc.?

The pistons dont have the right clearance, and there 3 oil drains in the
back that dont match..
fix the valves ... its cheaper..
