Should plug gap increase with performance?

Just wondering if you should ever stray from the spec factory spark plug
gap when you start upping the horsepower over stock?

  Should? no.
Could? yes, by no more than about .010"

   Does more power
  require a hotter/bigger spark?

No, power (any amount) only requires that the fuel/air mixture light off.
Unless you are running a Top Fuel car, you don't need a "hotter/bigger" spark.
BTW, a bigger spark will not automatically give you more power.

  What about the relationship between
higher output coils and spark plug gap?

A higher output (volts) coil will produce a spark that will jump a larger gap, that's all.
It's interesting to note that any ignition system will produce only the voltage required to jump the spark plug gap...no more.
If your present spark plug requires 19, 233 volts to jump the gap, then that trick 40,000 volt Flamethrower coil will only build up voltage until the 19, 233 level is reached, at which point the plug will fire.
If your present ignition system works, then an "upgrade" will be a waste of money.
