Actually, there is a plumbing system out there now that DOES use standard
copper pipe with crimped fittings.  Saw it on This Old House.

But it's far less damage tolerant when any motion is involved.  You very
rearely see solder repairs in aircraft wiring, at least not by a competent
A&P.
