If the bolt is completely seized to the sleeve, like the rear lower
strut/shock mount,
then cutting the rubber will make it tougher to get the bolt out.

I'd try penetrating oil first...

If that doesn't do it, I would try heat, by heat I mean MAPP gas or
acetylene, don't waste your time with propane.

If that doesn't do it, I'd sacrifice the little cage that holds the nut
still, 
and I would back the nut off a little and wack it really hard, w/heat if
it is stubborn.
If you don't want to alter your Scirocco, read on...

If that doesn't do it, I'd look into cutting the bolt on each side of the
mount, 
within the chassis engine mount brackets, so that you can remove the
mount, 
THEN just cut the rubber mount and remove the bolt and sleeve.

If you can't cut the bolt, you could always sacrifice the bracket for the
pass. side engine mount, I'm sure you have a spare one. 
Then you can drill, cut, or torch through the sleeve/bolt in at least 2
places, so that you can remove the mount/bracket.

Extreme, maybe... But the mount will come out, one way or another!

Btw, I use a ViseGrip to get the two 6mm allen bolts out, and I replace
them with two regular 13mm headed bolts.
