rain question

Every time it rains, my oil temp runs at 120 C, on dry days it stays at 100 C
unless I am going over 70 mph, then it move up to 120 C. So does anyone know
why it reads 120 C during normal driving when it rains??? I suppose oil
temp is unique to each car, but what is it supposed to be? I have heard oil
begins to break down at 240 F, which is less that 120 C.
