I have never ridden in a bilstein-equipped german car that I wasn't impressed
by. I just can't decide which ones I would buy...

That's the real paradox - good ride OR good handling. You can't have both -
period. I have Konis on Ground Contol coilovers in my racecar - I prefer it
over Tokico b/c of the infinite adjustability - Tokico has 5 pre-set levels. I
have Bilstein Sports with Dinan springs on my BMW. The "problem" is that both
cars now ride alike - not that that's a bad thing. The only problem is that my
no-skip Alpine CD deck skips BUT the damn thing handles like it's on rails.

IMHO, Konis are the best choice if you're driving a car that's dual purpose -
track and street. For street, Bilstein is fine, it's just not adjustable. If
you opt for Bilstein, get the Sports - they're engineered for lowered
supensions.
