Motor oil recommendations

 Yes, the thermostat in a properly-functioning cooling system will keep the
coolant at a steady temperature, but the oil temp can vary quite a bit at
the same time.
I've seen the oil temp in my MkII vary from 90 to 120 degrees C during a
drive when the water temp only varies by about 10 degrees.
