Well I will put in my 2 cents worth (half a cent maybe..)

Fan NEEDS to come on after the car shuts off.  If it does not, there is
something wrong in the circuit for the fan/switch.

The wifes golf seems to eat fan switches.  Every 18 months or so I have
to replace it, and it is always the low speed fan switch.  It is easy to
tell when it dies, as the fan does not come on when she stops the car. 
Sounds like your problem.

If the low speed is dead on the switch, the fan will not kick in until
the high temp range is hit and the high speed will kick it to keep it
from completely over heating.  But with out the low speed you run real
hot.  This could also contribute to the oil temp problem.

As for the "Clunking", do you have a stock exhaust?  I know the old
beater '82 I have (not a 16V) does the same thing.  Nice large clunk
when it goes under load, and my problem is the exhaust hitting the front
sway bar.  Only happened when I put in a real cheap header that seems to
sit lower thant the stock down pipe.
