Factory priorities installed oil temp guages...

As much as I hate idiot lights, I'd say the oil pressure light is usually 
sufficient for most drivers.  Low oil pressure is more than likely the 
condition you will be monitoring with the guage, and your VW's dynamic oil 
pressure system should already alert you to low pressure levels. The oil 
pressure warning system in your car is rpm sensitive: (hence the term 
"dynamic") it will let you know if pressure drops to dangerous levels, at 
least as well as a guage can. 

A stuck oil pressure relief valve will peg your guage VERY shortly (fraction 
of a second) before the oil filter, or pump breaks-- the ability to monitor 
for high oil pressure is not going to mean much given that event...

As a matter of fact, many of the Cabriolets I've ridden in, with the factory 
5 bar guages, are PEGGED at anywhere over idle, and actually tell the driver 
nothing at all at freeway speeds.

On the other hand, oil temp is something that will change gradually, and is a 
good thing to keep an eye on-- particularly if you like to cruise long 
distances at high speeds. 

Only one spot left in the console? I'd fill it with an oil temp guage. Two 
spots? I'd add a temp AND a ten bar oil pressure guage. As a matter of fact, 
that is what I DID.
