Its been my experience that a dry assembly is the best however, I like to
dab a little of what we call "Toyota Black" on the pan just to hold the
gasket in place. I have no idea what actually is "Toyota Black" is, it
comes in a plain white box in a plain white tube and we've been told that
its was formulated for Toyota. Ill have to research it and find out what
it is. Some 

Toyota engines don't use oil pan gaskets and this is what we use. Its
really good stuff, once its on, its ON and it never leaks. The only
reason I can find to use any kind of sealer is if either the pan has a
surface flaw/damage or the block mating surface has a flaw/damage. The
downside is, its a bitch and a half to remove! 

For prepping I use a small die grinder with a scotch brite wheel. Quick,
fast and effective. A razor blade would be my second choice or other
comparable gasket scraper. Getting the old gasket material off is
important to having a leak free oil pan. Ive never had one leak on a VW
in all my days...... always bolting up the pan dry works. I
digress.......
