Just making the surface of the head completely flat
or
Taking a little more off the surface of the head in order to increase
compression.

Aside from removing and replacing the head and all the gaskets that might go
with that job, the bill from your machinist should be fairly cheap. If he
doesn't have to do any tear down for you, I'd expect to pay around $35 for
this service.

You really have to do a little more planning with your engine to know if you
really want to increase the compression. I'd say that if you weren't sure
what this meant to begin with, and unless your head is warped and in need of
re-surfacing, don't even consider doing this.
