A knock sensor is effectively a piezo-electric microphone - it contains 
crystals which, when they vibrate, generate a voltage.  The construction of 
the sensor is tuned to make it particularly sensitive to certain 
frequencies, i.e. those generated by pre-ignition, and the location of the 
sensor on the block is also carefully selected to enhance its ability to 
pick-up these frequencies, as is the torque setting of the bolt attaching 
the sensor.  You also need some sort of signal conditioning filter attached 
to the sensor output to normalise the data, i.e. turn the noisy uneven raw 
output from the sensor into a stream of regular blips or whatever that can 
be understood by the ECU/knock box/whatever.
