Timing belt cover / Seats

Hey All,
First Q: I am beginning the "reassembly" phase of my 16v and I'm wondering
if I can leave the timing belt cover off the engine. Has anyone done this
long term w/o problems? Is it common practice? (This car won't be a daily
driver)

Second Q: Does anyone know if there is a way to get the seats to sit lower
in the car (MKII- leather)? I am ~6'4" and this car has a sunroof which hogs
my precious headroom.  Is there another seat or bracket I should be looking
for or will I have to mod the existing bracket?
