They absolutely do eliminate the flex that stock brake lines have in
them. Especially if the stock lines are old they tend to flex and swell
with the brake pulse. it does give a much firmer brake pedal. 
I don't know what it is you plan on changing alot? Lines? Naw.

Huh?? I think you might have that info reversed. SS lines are more
durable than stock lines. Less capable of line punctures over stock
rubber lines. Of all the VW's ive worked on or know about that have the
SS lines on street or full race applications, I know of none that have
ever had a brake line failure.

If carbon fiber brakes are so good, why doesn't
porsche/ferrari/lambroghini/bmw ect use them as stock?
Perhaps its a cost issue? 
I know that BMW embeds an ABS sensor wire into the brake lines up front.
Production costs might demand it be a rubber line. Who knows for sure. 
I do recall that the early SS lines for VW's were failure prone. None of
the early lines were DOT approved and now much of what's on the market is
DOT stamped.
I bought my SS lines way back in...... uh, well the Potterman was working
for Timmons VW at the time so its been a while ago. (6 years? MIKE?!) The
last time I inspected the lines (last month) they looked great. No kinks,
leaks, wear marks, nothing. 
Ill be putting a set on the GLi, eventually..
