lowering?

Let me put it this way.
If you regularly or even occasionally break traction or slide the car some while cornering cutting your springs will cause a difference in the car's breakaway characteristics and handling balance. Typically it'll understeer more because the rear springs have a lot of "dead" coils (fully compressed due to the progressive nature of the spring) at each end, so you won't have much effect on rear spring rate, whereas the front springs will get stiffer.
BTDT.
OTOH, if you never slide the car and don't go over 80% of its cornering traction limit, you'll never notice a difference in its handling balance so you can pretty much do whatever you want. (until you get into an emergency situation......;^)
I don't think anybody forgot your car had stock springs. It's pretty clear from the pictures. It's just the nature of any thread, especially on the Scirocco list, to not only address the specific issue, but to address related technical, social, political, aesthetic and just plain stupid issues.
