Wheel sizes?

I have had 3 Sciroccos all with different 15X7 custom rims and
195/50/15 tires by several manufacturers, stock springs, and gas
sport shocks by either Tokico or Bilisten, and on every one of those
cars the tires have rubbed on the wheel wells in hard turning. Now I
see lots of people with 16" rims using as much as a 205 tire, and
they report no problems with rubbing. What am I doing wrong here? The
reason I ask is because I plan on buying a new set of rims in not too
long, and I want to make sure I get it right this time.
The goal is to overcome the deliberate nature of the process.
