This sounds to me like maybe during the head gasket install, the 
intermediate shaft was unintentionally rotated, leaving the ignition too 
far retarded for the knock sensor to be able to advanced to compensate. 
I have to confess that I don't know what the "range" of advance for the 
knock box is. I don't think it is infinite though. 

Try this. put the engine at TDC. Now look at the distributor. keep in 
mind where the lead for cyl#1 is at and pop off the cap. Check that the 
rotor is lined up with where the lead is at. You should still check the 
timing, but it is tricky IME with the KS ignition, because it kinda 
adjusts it constantly. If anything, try to advance it just a tad and see 
if that helps. 


My brother's 86 GTI had a somewhat similar problem. The car would not 
pull hard for a second or two after the throttle was opened, after that 
it would pull just fine. I noticed that the closed throttle switch was 
not working, and replaced it. The problem went away.
