Don't worry about putting normal oil in with synthetic - all the synthetics
I have used(Redline, Amsoil, Valvoline, Mobil1) are "fully compatible" with
other oils.  Think it has something to do with SFI ratings or whatnot.

There was some oil in there, then.  Enough that the pressure never dropped,
except in turns near home, right?

Who told you this?  I've never heard of motor oil causing a warped head -
warped heads are the result of overheating, broken studs or improperly
torqued studs/bolts.  I sincerely doubt that oil caused your Jetta's head
to warp - overheating because there was no oil present, maybe.

If the oil light only came on around corners, it probably had 2-3 quarts in
it.  My Audi's oil light came on once under hard braking, it was exactly
one quart low.

What engine does it have?  Does it have an oil cooler?  Don't know.  Well,
even if it has an oil cooler, and the oil went straight to the ground, it
was not leaking out of a hose(if you put oil into an engine with an oil
cooler, it won't leak out a cooler hose until you start it).  I can't think
for the life of me where it might be leaking from, aside from drainplugs.
I am not aware of any oil hoses on an 8v.  Don't know!  Good luck!
