I've thought of shortening the whole bezel from a later Cabriolet, and
installing it with a Mk II instrument cluster into my Mk I dash. I'm not
sure, but I think it would work pretty well. I too like the later
instruments.

I saw that one Mk I at the stadium one day, I think it probably could have
been done better.

I've seen 2 MK-I Scirocco's with the MK-II dashes and although they 
worked and were completely functional, they looked like crap. They dont 
have enough of a raduis to match the contour of the middle of the 
windshield. So you have this goofy looking gap and can see the 
firewall. It kinda looks like it was all that he could get as a 
replacement and forced it work, thats the feeling you get after you 
look at it. I do like the MK-II dashes better, I just dont like round 
instrument clusters. I wish there was a way to make it fit and have it 
look somewhat like stock. Then again, maybe the ones I saw were just 
installed very poorly? (I sure hope so.)
